Mahi- Mahi Fish Tacos

Talk about the worlds easiest recipe EVER for blackened fish tacos!

I never liked fish until I met my husband- since then I'm always on lookout for quick and easy fish recipes. I'll admit cooking fish is not my forte - but recently I was reading something about fish tacos and could not get them off my mind. When I found this recipe and saw the picture the original chef attached, I couldn't believe how quick and easy it was! There had to be a mistake! There's no way it could be THAT simple and good- well yes it can! I added a few of my own ingredients and came up with something I am so excited to make at my next BBQ!

You need the following

I bought mahi-mahi and cod, and mahi-mahi wins hands down (in tase for me!)

Mix the ingredients on the left together in a bowl and set aside.

Next, turn your grill on "high" to preheat- leave closed while the gates get hot.

When grill hot, bring heat down to medium- place large pieces of tinfoil on the grill so the soft fish does not fall in through the grates. Oil up your foil .

Rub in the seasoning on both sides of your fish and place on the foil in the grill. Heat for 5 minutes per side until it reaches 137 degrees.

Slide fish off the foil when it is firm straight on to the grates to give them a "blacked" finish for a minute

After taking off my fish, I threw corn tortillas on to the grill (keeping cover open) to warm.

Finally I brought everything inside and garnished with (premade- sorry I'm lazy!) mango salsa, guacamole, shredded red cabbage and then my new favorite dressing from Costco (Bolthouse avocado ranch) Squeeze a little lime on top and it's PERFECT!

So easy and only took about 15 minutes from start to finish! I hope you give it a try!!
